Our Beef...

We have an enviable reputation for the quality of our beef which is supplied to us by Taste Tradition of Thirsk. We buy whole sides which have been dry aged for a minimum of 28 days and are prepared for us by our in house butcher. We are currently offering three of the finest beef breeds which are all reared within an eighteen mile radius of Hovingham.

Originally from south west Ireland the breed’s arrival on the mainland can be traced back to 1882. Dexter’s are medium to slow growers and are by nature a smaller animal which helps to keep the flavour more intense, the meat is well marbled with a ‘sweeter’ flavour .

Aberdeen Angus
The breed originated from three farms in Aberdeen and Angus.
The largest of the beef breeds. The resulting steaks are firm in texture with a good distribution of fat, the flavour is strong and full. Aberdeen Angus is naturally high in antioxidants and omega 3 and 6.

Long Horn
The oldest registered breed of cattle in the world and considered by many to be the finest. Chosen by Heston Blumenthal in 2006 following his quest around the globe in search of the best steak. Voted ‘Best Steak’ by Country Life readers. Nutty, blue cheese notes with marvellous texture and abundant juices.
